Gourmet Gameday: Buffalo Chicken Endives

Endives deserve more love!

 

Ingredients

  • 1 rotisserie chicken, deconstructed and shredded (usually yields about 3-4 cups)

  • 3 celery sticks, finely diced 

  • ½ cup green onions, finely diced

  • ⅓ cup buffalo sauce

  • ½ cup sour cream

  • ½ cup mayo

  • Salt, to taste

  • 3-4 endives

*as you’re making the buffalo chicken mixture, you may need to add more mayo and/or sour cream until you reach your desired consistency – but start with the measurements above*

 

Step 1

Remove all the meat from your rotisserie chicken, then shred


Step 2

Wash, dry, and finely chop your veggies


Step 3

To a large bowl, add shredded chicken, diced celery, diced green onion, mayo, and sour cream. Mix until fully combined, then add buffalo sauce, salt, and pepper. Add more mayo and/or sour cream until it reaches your desired consistency

Hauste hint: kick up the heat with a tablespoon of sriracha!


Step 4

Trim about ½ of the root of the endive and discard. Separate the leaves, then wash and pat dry


Step 5

Scoop the buffalo chicken mixture into each endive leaf & enjoy!
