Heavy Apps: Roasted Balsamic Grapes & Whipped Brie
Serve this, and your guests will be talking about it long after the last bite.
Ingredients:
1 large bunch of red grapes
8 oz brie
1 shallot, thinly sliced
3 tbsp balsamic vinegar
2 tbsp olive oil
4-5 sprigs of fresh thyme
Pinch of salt & pepper
¼ cup walnuts, chopped
Step 1
Preheat your oven to 400°F
Step 2
Add the bunch of grapes, sliced shallot, fresh thyme, salt & pepper to an oven safe baking dish. Drizzle with olive oil and balsamic vinegar. Bake for about 45-50 minutes, or until the grapes start to burst.
we ended up baking for closer to 50 minutes, it depends on your oven and the baking dish you use! Just keep an eye on them
Step 3
While your grapes are roasting, remove the rind from the brie and chop into chunks. Place brie chunks in a food processor and pulse until whipped and smooth, about 5 minutes, scraping down the sides as needed..
Step 4
Slice a French baguette, you can toast the slices to make crostini or leave as is!
Step 5
Once grapes are ready, spread your whipped brie to the bottom a serving dish and top with roasted grapes and caramelized shallots. Drizzle the juices from the baking dish over the grapes for extra flavor.
Step 6
Top with chopped walnuts, more fresh thyme sprigs, and serve with the baguette!
