Olive Salsa Verde with Grilled Baguette

Perfect appetizer for those 100° days!

Ingredients:

  • 4 oz Halloumi 

  • 20 oz Castelvetrano olives, pitted

  • ¼ cup Italian parsley

  • 1 clove garlic

  • 1 small shallot

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp champagne vinegar

  • Large pinch of salt

  • Large pinch of freshly ground black pepper

  • Large pinch of red pepper flakes

  • Zest of 1 lemon

  • Juice of ½ lemon (about 2 tbsp)

for serving

  • Grilled baguette

  • Crackers

 

Step 1

Finely dice the olives, parsley, shallot, and garlic. Add to a large bowl.


Step 2

Add the olive oil, lemon zest, lemon juice, vinegar, red pepper flakes. Stir until well combined.


Step 3

Season with a generous pinch of salt, black pepper (and more vinegar or lemon if needed). Let it sit for at least 10-15 minutes so the flavors can come together.


Step 4

Serve with sliced grilled baguette or crackers.
