Gourmet Gameday: Kickoff Crab Dip

This dip is hot, cheesy, loaded with crab, and has a spicy kick. Perfect to kick off your Super Bowl party!

Ingredients

  • 1 ¼ cup sharp cheddar cheese, shredded

  • ½ cup gouda cheese, shredded

  • 4 oz cream cheese, softened

  • ½ cup store-bought pimento cheese dip

  • ⅓ cup mayonnaise

  • 1 tsp Dijon mustard

  • Zest of 1 lemon

  • 1 tablespoon fresh lemon juice

  • 2 garlic cloves, minced

  • 3 green onions, thinly sliced (separate the white & light green parts from the dark green)

  • 2 tablespoons Calabrian chopped chilis

  • ½ teaspoon Old Bay seasoning

  • 12 oz fresh Dungeness crab meat

  • San Fransisco sourdough baguette, for serving

  • Lemon wedges, for serving

 

Step 1

Preheat oven to 350°F.


Step 2

Separate the white/light green and dark green parts of the green onions. Thinly slice the white and light green parts. Set aside the dark green parts for garnish.


Step 3

Using the large holes on a box grater, shred the sharp cheddar and Gouda. Add both to a large mixing bowl and toss together. Reserve half (¾ cup total) for topping.


Step 4

To the mixing bowl, add cream cheese, pimento cheese dip, and mayo. Mix until smooth. Stir in Dijon, lemon juice, lemon zest, garlic, sliced green onions, Calabrian chilis, and Old Bay. Mix well.


Step 5

Drain and pat dry the crab meat, then pick through to remove any shells. Gently fold crab into the dip, being careful not to break up the chunks.


Step 6

Transfer mixture to a small baking dish, cast iron skillet, or stainless steel skillet. Top with reserved cheese.


Step 7

Bake for 25-30 minutes until bubbly and melted.

HAUSTE HINT: Optional, but when you have about 10 minutes left on your timer, run your sourdough baguette under water to submerge it completely, then add it directly to the oven rack. When your dip is ready, your baguette will be "freshly baked" too! One of our favorite tips!


Step 8

Broil for 2-3 minutes until golden brown on top.


Step 9

Let cool 5 minutes. While the dip is cooling, slice the reserved dark green onions. We like to cut them on an extreme bias for aesthetic purposes, but you do you!


Step 10

Garnish with sliced green onions. Serve hot with warm San Francisco sourdough baguette.

HAUSTE HINT: To have fresh hot dip throughout your party, split the dip into two smaller baking dishes. When one gets low, pop the other in the oven! Fresh, hot dip all gameday long!
